You want something like:
/usr/bin/fetchmail --fetchmailrc fetchmailrc_location --logfile
logfile_location <--silent or -v -v>
when you run it.
So, for you, maybe:
/usr/bin/fetchmail --logfile $HOME/.fetchmail.logs -v -v
