Or you can use the MTA parameter in .fetchmailrc to pass it to a
formail/procmail pipe like so:
MTA /usr/bin/formail -I"Added-Header: TAG" -ds /usr/bin/procmail -m
path-to-.procmailrc
Add the appropriate code to the .procmailrc to catch the "Added-Header:
TAG" and sort on that. Use a different TAG for each mailbox retrieved
for sorting purposes.

Unless you've configured it differently, the default for fetchmail is to
pass email to the SMTP server listening on loopback.
Maybe you could provide the contents of your .fetchmailrc and the
version of fetchmail you're using?
