How do I remove the e-mail address from headers

My headers look like this.

  Date: Tue, 23 Mar 1999 03:10:37 -0600
  From: Gary Frederick <gary(_dot_)frederick(_at_)jsoft(_dot_)com>
  Subject: corba design patterns r us

I want them to look like this

  Date: Tue, 23 Mar 1999 03:10:37 -0600
  From: Gary Frederick
  Subject: corba design patterns r us

with no e-mail address.

I remember there was some documentation on how to just have the From: name and
not the address show up and I can't find it. (I'm looking on the tip of my
nose next (-:)

???
