I'm thinking that this might be more of a sendmail problem than a
procmail problem, but does anyonehave a clue?
You are exactly right.... this part:

tells you it is not a procmail error....
The reason your header is not seen is that the message is not being
forwarded (it is a forward-loop) but being bounced.
Check your sendmail config @poseidon to accept 8-bit data...
