How to pick up a string?

I have a problem to figure how to pick up a string.  I have
someone who set "Organisation: La Masse critique" .  I would like
to be able to Identify his mail.  I tried

* ^Organisation:.*'La Masse critique' 
| $FORMAIL -A"X-Sorted: critique" >> $CRITIQUE


But obviously it does not work.  How can it be done?
