It seems the -X sendmail flag would do this but it doesn't for me. I
only see incoming data when using that flag, although the man page
clearly says it should log incoming and outgoing data.
I have never tried such a thing myself, but the question is asked quite
often in comp.mail.sendmail. I suggest you go there or try to find a
solution in Deja.
I save copies of all outgoing mail withing my MUA, mutt.
