I had the same question today, and here's how I handled it:
<xsl:template match="body">
<fragment font="Helvetica" fontsize="7">
<xsl:apply-templates />
</fragment>
</xsl:template>
<xsl:template match="sub">
<!-- do what you want here -->
</xsl:template>
Create a template to apply to the <sub> elements, and apply-templates from
inside the parent template.
