There is an XSLT Standard Library at:
http://xsltsl.sourceforge.net/
It should work with all processors, and it contains a module for formatting
dates and times.

Are there any inbuilt functions within XSL that will allow me to insert
the current date/time?
For example :
<fo:block><fo:my_date_function_that_i_cant_find()></fo:block>
Which would simply output :
DD / MM / YYYY
