The design pattern is to write an identity stylesheet with just enough 
template rules to tweak the changes you need.

Note that XSLT will preserve your document model structure, but not your 
document syntax.  The end result of your transformation will be entirely 
acceptable to another XML processor, but it may or may not be acceptable to 
human eyes based on the expectations of the user.

Use the following for your catch-all:

<xsl:template match="@*|node()">
   <xsl:copy>
     <xsl:apply-templates select="@*|node()"/>
   </xsl:copy>
</xsl:template>

and then just write as many changes as you wish.
