You mention "in this case is if matches the name of one of the elements

It sounds like you don't want to use a named template at all (which
can't be done dynanically) but just
<xsl:apply-templates select="*[name()=$ROOT]"/>
so if you pass in ROOT as "CUSTOMER" you will get the current behaviour.
