Couldn't you have something like:

<xsl:template match="item[contains(text(),'%')]">

My problem is, that there are planty of unknown items in the variable

dont know and that might change. But I want the XML structure to stay as

is, and just replace some items values.

 <unkown_items/>
 <unkown_items/>
</XML>

How can I do this?
