Well, if i put a  xsl:output encoding="ISO-8859-1" it appears as

hmm trouble is after being through several mail gateways I can't be sure
if what I see corresponds to what you posted. For example your original
mail was latin1 encoded as was my reply, but your reply now is utf-8 and
my reply has been re-encoded to that.
Your original question had the header
  Content-Type: text/plain; charset=ISO-8859-1
Your latest follow up has  (by the time it reached me)
X-MIME-Autoconverted: from base64 to 8bit by nag.co.uk id MAA15563
Content-Type: text/plain; charset=UTF-8
