Instead of extracting only the name of an element it extracts
everything.

If you want to output the name of an element you need touse name()
your stylesheet uses text() which extracts the text node child of the
current element.

<xsl:template match="/project/namespace/querySubject/queryItem">

That match matches elements in no namespace, but your elements are
in the namespace
xmlns="http://www.developer.cognos.com/schemas/bmt/32/3";

so you need
to add
xmlns:c="http://www.developer.cognos.com/schemas/bmt/32/3";
then use

<xsl:template match="/c:project/c:namespace/c:querySubject/c:queryItem">

and prefix other names in Xpath expressions that refer to this
namespace.
