You could try
substring-before(substring-after(normalize-space(.),' '),' ')
but note this will be prone to break if (when) we see variation from
the pattern on which it depends.
While the examples you have given follow that pattern, they also
follow an indefinite number of other patterns. That is, we still
don't have a specification of the problem, meaning an actual solution
is impossible.
