Plan B: wildcard DNS

    But what if we do this instead?

bounce+J0*dG7h8yzAwB(_at_)foo(_dot_)AT(_dot_)aol(_dot_)com(_dot_)VIA(_dot_)bar(_dot_)pobox(_dot_)com(_dot_)BY(_dot_)bounce(_dot_)pobox(_dot_)com
-> recipient

I think the wildcard idea is clever, though it may hit stumbling blocks I haven't thought of yet.

With slight modification on your suggestion, you could get away with modifying just the end part of the domain. You could even leave the entire address intact on the left:

foo(_at_)aol(_dot_)com(_dot_)TO(_dot_)bar(_dot_)pobox(_dot_)com(_dot_)ID(_dot_)J0*dG7h8yzAwB(_dot_)BY(_dot_)bounce(_dot_)pobox(_dot_)com

This has the added advantage that you don't even have to switch out the @ sign in the original, since you are only ever adding to the end. The original email address is still totally intact on the left so reversing is a snap.

Downsides seem to be 1. making sure bounce handlers all work with wildcarded names, and 2. there might be characters legal on the LHS that don't fit on the RHS (like the notorious underscore)

There are probably other downsides I don't know of but it's damned clever :)

Here is a stupid question, this may be totally off base or already answered. Would it be possible to forward messages using MAIL FROM: <> (I'm not sure what that would even get you. OK forget I said anything... :)
