set logfile /var/log/fetchmail.log

The problem is evident, Fetchmail has not privileges to write the
/var/log/fetchmail.log. I suppose that in Debian, Fetchmail is running as
FETCHMAIL user as security prevent, but I tried to write a log in /tmp (with
write privileges for all users, and the file is created, but without data
!!)
How can I do write a log?

As you can see, date/time stamps are present. What version of
fetchmail are you using and what is in your .fetchmailrc?
