As long as the mailboxes being polled by fetchmail are single
drop then yes. Just use the standard recipient re-writing
facilities. If it's multi-drop then you'll need to run a
local SMTP server to re-write the recipients.

Fetchmail can deliver to any SMTP server, whether it's on the
same host or a remote host.
