But these, as you say elsewhere, are "non text fields".
I don't think it would ever make sense for mail _transport_ to 
work by converting headers to voice and back. 

Since these are *message* and *content* (i.e. media)
identifiers, "mail transport" isn't the only situation that
applies.  There are literally hundreds of media types, a
dozen message subtypes, many non-mail methods of
transporting content (message or other types), as well
as non-transport applications for comparison (e.g.
"search this folder for all messages with message
identifiers containing the top-level domain NET
(case-insensitive) or any subdomain under it").
