pbmserv-bounce(_at_)gamerz(_dot_)net).  so... I suppose it's up to me, as the
admin/author to make my system smart enough to see "oh... here's a message
I don't understand... can you read it, Richard?"

If there is an automated protocol possible in place that allows your MTA to respond to incoming challenges that might solve the problem. But of course anything automated will let spammers do it to but at the least they would have to have a valid email address to do so. Once they have a valid email address, then they can be blocked or traced.
