How common is this really in email? There are lots of subdomains, but in
practice almost none are used in email and those that are used are likely
coming from separate MTA systems.

A common model for UK ISPs like Demon and Freeserve is to allocate a
domain name to customers, e.g. inch.demon.co.uk, and customers can have
any email address at their domain. If Demon were to deploy DKIM they
may want their outgoing relays to sign with e.g. 
"i=fanf(_at_)inch(_dot_)demon(_dot_)co(_dot_)uk;
d=demon.co.uk".
