Text-mode signatures

From section 5.2.1 of RFC 2440bis:

   0x01: Signature of a canonical text document.
       This means the signer owns it, created it, or certifies that it
       has not been modified.  The signature is calculated over the
       text data with its line endings converted to <CR><LF> and
       trailing blanks removed.

What does 'line ending' mean in this context?  According to section
3.4, text has to be interpreted in UTF-8.  Which of the line endings
available with UTF-8 shall be converted to <CR><LF>?

What happens to trailing blank lines?
