<section title="Acknowledgements"> should work.
I think you would need to create the section at the back of the <front>
section, and not in the <back> section. <section> elements that are children of
<back> are rendered in text with appendix-style numbers.
Or just include a note that you would like the section not to be numbered as an
appendix, and trust the RFC editor to deal with it in due course :-)
