how to find the "From" field

I have noticed that different e-mail clients
change the format of the "From:" field
for example is  send and e-mail from pine
there is no <...> signs in the "From:" field
but when I send it from outlook there is,

my question is how can I get the correct "From:" address
after striping all unnecessary signs ?
