I have noticed that different e-mail clients
change the format of the "From:" field

my question is how can I get the correct "From:" address
after striping all unnecessary signs ?

One way is to use formail.

             FROM=`$FORMAIL -zrx To:`

(Not inside the recipe but somewhere earlier to it.)
This solves both your problems, as you no longer have to
edit out <>, I believe.  (Haven't re-checked this, but
I'm pretty sure it's true.)
