I think you are misunderstanding "extract" - it will "extract the
contents" of a particular header, not remove/delete it from the message,
which is what I suspect you want to do ...
Not quite sure off-hand how to actually remove a header - perhaps use,
e.g.
formail -I "Subject: " to remove the subject, i.e. make it blank ...
