destination, nor do you use a lock file.

Correct and correct.

But...  I assumed that DOVECOT_DELIVERY was a programme going by the
variable name and the path.  Since I do not use dovecot I do not know
and have little inclination to find out.  If I am right then I would
respectfully suggest the OP try asking his question on a dovecot mailing
list.
