I am not an expert, but I do use IPv6.
What you have is basically correct, just a couple of points.
1) It is possible for a single MX to have both IPv4 A and IPv6 AAAA
records
2) The format is the 128bit address split into 8 16bit values
expressed in hex and separated by ':' with the convention that
consecutive high order zero values are represented by '::'. So
1234:5678:0:0:0:0:9abc:def0 would be written 1234:5678::9abc:def0
