IIS 6 SMTP uses <> as the envelope sender for DSNs.

I'm not sure why it's changing to postmaster for you. Now, the from header in
an MS DSN says, "From: postmaster(_at_)helo".
It would not be wise to reject mail from postmaster addresses. This is the
address I would expect people to contact me with and also the address I would
reply from. This is also the address I would use when contacting other
postmasters.
