Wow.... great thread!  I think I'm on my way... thanks for all the help!
I'm a little confused on the apply-templates inside the copy element,
which also confuses a bit.... and so on... but I'll work through it. 
Maybe more questions later.

I don't want the <FOO>on you!</FOO> match.
