A few thoughts:

The library field -- linked data,  digital libraries, digital humanities,  etc. 
 MARC (still the main data format for library catalogs) has an xml format 
(unsurprisingly,  its called MARC-XML) used for data exchange and data reuse.   
Many digital library platforms have a METS or MODS XML foundation.  Special 
collections and archives are using XML (EAD, EAC-CPF, METS, MODS, Dublin Core) 
for their finding aids,  their digital collections, their collections 
management systems.

Publishing is another good field to look at.   All ebook formats (kindle, mobi) 
are XML based.

Pretty sure Google and Microsoft hire XML people, but that's probably super 
competitive.

The U.S. military also uses XML for their interactive tech manuals,  so 
companies like Lockheed Martin, Northrup Grumman, might good places to look.

If you're on Linked In, there are a couple of XML interest groups; you could 
see what companies are members of those groups.
