Why does it fetchmail this way? I in my opinion, it's nicer to keep them
on the IMAP server until the mail has been successfully delivered to the
local MTA.

There's no error code from the MTA? Fetchmail, as is documented,
treats some codes and remove messages. A message rejected by the MTA
is, IMHO, something that should be deleted, since the MTA could be
doing some SPAM check, content filtering, etc. 

If fetchmail couldn't connect to the MTA, the mail would be kept. If
the MTA sends a rejection message, the message is considered invalid
and will be deleted.
