When you dechunk a stream, you extract chunks of data as you receive them. So
you can begin processing each chunk as soon as its size data has been
received.
I'm not sure about other transfer encodings. But if the transfer encoding was
not processable in this way you would gain no benefit from early access to
the data - you too wouldnt be able to decode it either.
