How does the email make it to ~/Mail/mbox though? This isn't a standard
place for mail to be spooled (ie. delivered) - are you using your mail
client's export/save function to put the mail in ~/Mail/mbox?

Whilst I don't wish to insult your intelligence, are you reading the
_entire_ message with cat, or just looking at the last screenful? The way
HTML email works is the multipart/alternative system: Outlook creates two
versions of the email - one text/plain (ASCII), one text/html (HTML
formated), and the mail client on the receiving end decides which one to
use: when you are viewing the raw message source, they may be in any order, so
if you have not read all of the email, you may just be seeing the text/plain
part.
