Well, you haven't shown us what the From: header says. The From_
header (very top line of the mail, no colon) is a different animal.
Moreover, condition lines must start with an asterisk. I'll assume
that you cut the line out for display here from something like
* (^From:(_dot_)*foo(_at_)bar|\
^From:.*whatever)
because otherwise, we'd expect to see a syntax error in the log.
So, uh, okay.
Last, you do not need to quote "@".
Perhaps you want as your condition:
* ^From(_dot_)*(_at_)bounce\azoogle\(_dot_)com
