In that case it's MIMEDefang that is changing the subject in the first
place, so you should be able to remove the tag by editing your MIMEDefang
configuration.

Normally "spamassassin -d" should be all you need to remove SA markup,
including the Subject: tag.  If that's not working, then it's because
the tag inserted by MIMEDefang doesn't match what SA expects to find.

In the event that you want the Subject tag to be present for messages that
are tagged as spam but that don't score high enough to get forwarded, it
might be easer to _add_ the tag with procmail rather than try to parse and
remove it.
