the file ~/.mailboxes contains ALL the mailboxes on the account, but
that may be simply that my usual client, Mail.app, offers no
subscription options.
In Courier is a file in the ~/Maildir with the subscribed Mailfolders
and if you use procmail to filter, you can use TRAP to setup a small
script which check, whether the last folder is already in the subscribed
list and if not, it add it.
The next time you log into your IMAP server it is then automaticale used
