Actually, there is no need to run it as root - run it as an unpriv
user. If it's not in the default location you will have to explicitly
mention it on the command line.

Yes, but the choice of SMTP/POP/IMAP is up to you, and depends
somewhat on your needs. I would suggest that you look at Cyrus IMAP,
as it scales well (IME) and doesn't require user accounts on the
server. I'm also a fan of Sendmail, but would be the first to admit
that it has a history of being less friendly than other solutions.
I'd suggest you consider virus/content filtering for your mail server.
There are a number of options, many free.
