the format of header fields that are published in RFCs is known.
there are many header fields that have never been formally defined, or if they
are defined, their definitions are not widely known.
maybe we can pretend that they're unknown and that will be good enough,
especially if new 'self-describing' fields can be distinguished somehow
from legacy fields.
