There may be multiple MXs with differing capabilities.

UAs usually don't find their injection SMTP server by MX, do they? But I 
get your point...

Moreover, a UA on a portable device may have multiple
connection options, e.g. an ISPs SMTP server used as a
relay when on the road, and an office SMTP relay when
at home base; the capabilities may differ, and it may
not be known which will be used to send if the message
is being composed when truly off-line.

The recorded capabilities are used as an educated guess. If the actual 
server caps are lacking, the client needs to re-code down to something 
the server can manage (or be conservative and only use 7bit-domain 
CTEs).
