No, it is not true. Header analysis can reveal whether the relaying hosts
sequence & pattern in the Received: headers is consistent with previous
(bonafide) messages received from the sender.
Most people uses just one (or a few at most) SMTP servers for sending
their mail.
I wonder whether any existing bayesian filters look at this sort of thing.
