The geek in me would love to know how this sort of thing is done. i.e. how
can these scum use any arbitrary address to bounce off their trash ?
This is an old topic. It's called "spam on the procmail list"
Again, I didn't see this spam, must have hit my filters somewhere.
Basically they just send it BCC to the procmail list.

SPAM-procmail
will catch all messages which are BCC'd to the group.
There are other methods, but they have been mentioned repeatedly, so I won't
repeat them.
