I run sendmail and procmail on linux, with a pretty standard configuration.
Procmail does my local delivery, and deposits messages into mbox files. I'd

Sure, no problem. Just change your default procmailrc to define the
DEFAULT variable to something that your new imap and pop3 daemons know
about, and convert your existing mailboxes.
Remember that sendmail talks to the network and only deals with local
stuff with the LDA. Sendmail itself has no relationship with mailboxes;
you just have to decide where to put each user's maildir, and then get
your mail *reader* daemons to look there. If you haven't decided on an
imapd/pop3d package yet, Courier IMAP seems to be well loved. I don't
have experience with any others, but I haven't had problems with Courier.
There was just a short chain on this topic in inet-access, and someone
mentioned http://www.nb.net/~lbudney/linux/software/safecat.html which
may help in the transition.
