This postfix-setup seems a bit special, because
"reject_rhsbl_client/-sender" settings are put together in
"smtpd_recipient_restrictions".


I am hesitant to add all these as I am affraid they may remove too
much legit mail.

Yes, be careful. For example: at the moment bl.spamcop.net works quite
well (for me), but there were times that it would block too much. The
same can be going on with any of the other blacklists.
But I remember that you are using SpamAssassin, so you could first add
them to SA and give them some scoring power.


I run my mail server off a
residential (sshhh) connection, do you think half of these BLs would
ban me?

There are webpages where you can test that. ("that" meaning that you
might already be blacklisted by some, because they assume that your IP
is "dynamic")
