I'm not quite getting that... What is the difference between a bounce
and a real mail?

A bounce has an empty MAIL FROM, in other words "<>"

So if that is a valid address, they can set it up to reject mail from "<>" and they can use an alternate address for outgoing mail (possibly using SRS) so that valid bounces will get back to the sender, but bounces to the forged mail will get blocked.
