If I start using SRS to make SPF checks against my forwarded email work,
what happens with a site that does not understand SRS? Aren't they
going to have a fairly incomprehensible FROM address to deal with?

Receivers don't have to understand the format of SRS'ed MAIL FROM
addresses. Usually just the forwarder himself does, in order to map
incoming bounces back to the original source address for the forwarded
message.
