Not exactly. To do that,
VARIABLE=
does the job in procmail, just as in sh. In procmail, this works as well:
VARIABLE =
Naming the variable in a vacuum, as Alan showed,
VARIABLE
*unsets* it and clears it from procmail's environment.
For many purposes it makes no difference whether a variable is unset, or set
but null, but sometimes it does.
