Mutt, halfway. You can tell it that when you're reading a special folder 
(say, ~/mail/lists/ietf-822), all replies should get an additional 
header field. One or two lines in .muttrc.
That additional header field can be "x-hi-there" or "reply-to" or 
anything else.
It's about as "automatic" as all other mutt configuration.
