What do you really want to do ?
You can configure your mua to use a different delivery agent, or to use
different parameters. Thus you can specify the -C option to sendmail
to use an alternate config file (I checked the man page on OSF4.0, I
don't really know how it is on other systems :-),
or you can write a script or procmail filter to do what you want, before
the mail is forwarded.

This is covered by the procmailex(5) man page, but you should probably
add a test on recipients name to avoid making vacation replies to any
lists... e.g.
* ^TO(1st(_at_)address|2nd(_at_)addres)
