Official "Junk" status

Does junkmail normally have the official "I am junk" priority set, or does
the crappy sfotware the spammers tend to use lie about the priority level
of its spam?

The reason I ask is that I am doing work for a place that is spamming like
crazy and isnt about to stop because they make big money doing it. I can
charge them high prices for my time and point out that dealing with
complaints takes a lot of my time and threy just say "good job, keep it
up, have some more money, how about a free computer too so you can deal
with it all the better" and so on.

So I am doing what I can, and one of the things I think I can do since
they now pour their junk through a junkserver that I do systems stuff on,
is at least try to ensure al ltheir junkmail goes out as priority "junk"
so that anyone not desiring to receive junkmal can simply set their MTA to
toss junk in the bitbucket.

The only reason I use sendmail is because Linuxconf likes it, I was an
smail man myself. So I dont know much about sendmail I just pointy-clicky
in Linuxconf or cut+paste chuncks of sendmail.cf from www.sendmail.org
(e.g. to secure server against relaying). SO I do not know if I just need
a sendmail header-rewrite rule or to somehow insinuate procmail into the
outgoing mail process. I am willing if need be to assume ALL mail they
send from their local windows boxes through the spam-server, or perhaps
even any mail whatsoever that passes through the spamserver, is junk. 

There ya go era, I can be a little proactive.  ;-)

Maybe this isnt the right list for this but I dont seem to be on the
sendmail list despite having applied long ago. Maybe I should join some
kind of spam list. But I heard someone on this list talking as if they had
procmail invoved in outgoing mail somehow so thought I'd at least ask. Oh
yeah also because you guys write the filters so I am willing to cooperate
to try to ensure that your filters can catch anything that these guys put
out.
