Maybe we should stop putting HELO information in the received headers
and just stick with the IP and rDNS result? Does that violate any RFC's

It would be legal, but RFC2821 considers entering the EHLO paramter into
the Received:-line a SHOULD. If you want deviate from this in more than an
individual case-by-case scenario, you should change RFC2821 to reflect
this, IMNSHO.
